How to Create Your Own Sourdough Starter at Home
Welcome to Breden Mountain Farms, where we believe in bringing farm-fresh ingredients and timeless traditions right to your kitchen! Today, we're going to dive into one of my greatest friend and enemy, sourdough starters. Sourdough starters are the bane of my existence and if not for the delicious bread they help create I would be an instant yeast girly for life!
Step 1: Gather Your Ingredients
To start your sourdough starter, you'll need:
1 cup of all-purpose flour
1 cup of lukewarm water
A kitchen towel or cheesecloth
Step 2: Mix Flour and Water
In your glass jar, combine the flour and water. Stir well until the mixture is smooth and free of lumps. Your starter should have the consistency of pancake batter.
Step 3: Let It Ferment
Cover the jar with a kitchen towel or cheesecloth and secure it with a rubber band. This will allow your starter to breathe while keeping out any unwanted visitors. Let the jar sit at room temperature, away from direct sunlight.
Step 4: Feed Your Starter
After 24 hours, you'll start to see bubbles forming in your starter. This means it's time to give it its first feeding. Discard half of the starter and add in another 1/2 cup of flour and 1/2 cup of lukewarm water. Stir well and let it sit for another 24 hours.
Step 5: Repeat and Maintain
Continue to discard and feed your starter every 24 hours. You'll notice that it becomes more active and bubbly as the days go by. After about a week, your starter should be ready to use in your sourdough recipes!
Step 6: Baking with Your Starter
Once your starter is nice and bubbly, you can use it to bake delicious sourdough bread, pancakes, waffles, and more! Remember to always reserve a small amount of starter to keep it alive for your next baking adventure.

Welcome back, fellow home bakers! Today, we're diving into the wonderful world of proofing bread. If you've ever struggled with getting that perfect rise or if you're a newbie in the bread-making realm, fret not! We've got you covered with some tips and tricks to make proofing a piece of cake! (or rather a slice of bread)
What is Proofing?
In simple terms, proofing is the final rise that your dough undergoes before baking. This crucial step allows the yeast to do its magic, creating those lovely air pockets and giving your bread its light, airy texture. You can proof your bread in a proofing basket or a proofing container, either are dandy!
Tip #1: Find the Perfect Spot
Think of your dough as a delicate flower that needs just the right amount of love and warmth to bloom. Find a cozy spot in your kitchen - maybe near a sunny window or on top of the fridge - where your dough can proof undisturbed.
Tip #2: The Poke Test
Not sure if your dough is ready to bake? Give it a poke! Gently poke your dough with a floured finger. If the indentation remains, it's time to bake. If it springs back, give it more time to proof.
Tip #3: Embrace the Slow Proof
Patience is key in the world of proofing. While a quick rise can be tempting, a slow proof in the fridge overnight can work wonders for the flavor and texture of your bread. Plus, it's like a magic trick - you put your dough in the fridge and wake up to beautifully proofed dough ready to bake. When I leave my dough in the fridge I like to put it into a proofing container with a lid.

As an avid home cook, the majority of my meals are prepared in a cast iron skillet. I’m a one-pan/one-pot meal kind of gal and in my personal opinion, one can never have too many skillets. One of my favorite skillets to use is the Lodge 10.25 Inch Cast Iron Pre-Seasoned Skillet - it’s tried and true!
First off, the skillet's quality is impeccable. Made from durable cast iron, this skillet is as sturdy as it gets. The weight of it alone shows that it means business in the kitchen.
The true appeal for me lies in the skillet's versatility. I've used it to sear steaks to perfection, cook up some cabbage and weenies (a personal favorite, yum), crunchy cornbread and even bake delicious bread (my favorite being focaccia). The heat distribution is fantastic, ensuring that everything cooks evenly.
Cleaning the skillet is simple. A quick rinse with water and a gentle scrub is usually all it takes to get it shining like new again. Remember the most important rule of skillet care; don’t wash it with soap! Granny always told us, that soap will remove the seasoning that cast iron cookware needs before you cook with it. This may or may not be true, but you can never be too careful!

Simply Focaccia

Focaccia; that beautifully, crispy Italian classic. This may not be the first thing that comes to mind when you think of hillbilly country cooking, however for me if bread is involved, a hillbilly’s involved somewhere.
Focaccia is one of my favorite breads to make. It’s simple, straight forward and most importantly, it’s tasty. If it’s your first-time baking bread I highly recommend starting with focaccia. You can add olives on top or put some tomato sauce with fresh cheese. Personally, I love cooking it in a skillet with kosher salt sprinkled on top.
Our first step in bread making, take a deep breath and smile. Next measure out 512 grams of bread flour, 10 grams of kosher salt and a packet of instant yeast. Loosely mix the dry ingredients then add 455 grams of warm (not hot, the yeast is sensitive) water. Stir with a wooden spoon until you’ve got a nice sticky dough, then I like to oil my hand with olive oil and give the dough a couple turns until its smooth.
Remember, don’t overwork the dough. After you’ve gotten it into a smooth ball place in an oiled bowl or container and place plastic wrap or a lid over top. To oil the bowl or container you’ll want to use oilve oil and I usually measure this part with my heart. The more oilve oil the better in my opinion.
Now place your covered dough in the fridge for 12-48 hours, depending. The longer you let this dough set the better the consistency and the bouncer the bread will be. If you want the bread sooner, you can skip the fridge and let the dough sit out in a warm place for 1-2 hours or until it has doubled (this can differ depending on the weather and your specific geographical location).
When it’s time to bake take the dough out of the fridge and place in an oiled pan or skillet then cover with plastic wrap and let it rise for an hour or until doubled. While this is happening, you can go ahead and pre-heat your oven to 425 F. Once the dough has risen take off the plastic wrap, pour some olive oil over top and take your fingers to put dimples into the bread and spread it out. After this you can add other toppings of your choosing or just simply sprinkle some kosher salt. Bake the bread for 25-28 minutes or until the top is crispy, golden brown.
Voila, you’ve got mouthwatering focaccia bread!
